No-Knead Spelt Bread

​Born from a broken wrist and a love for homemade bread and jam in the morning.

While staying at the Petit farm in France, the best mornings were the ones that smelt like fresh bread when I came down the stairs. Our help exchange host Ciane showed me how easy her recipe for it is, yahoo! The no-knead technique was a recent development after she broke her wrist and the bread dough was left to its own devices. It turns out the dough was a legend and happy left to rest and grow rather than being punched and slapped around.
